How to cook ofada rice

1. Rinse the rice in several changes of water until the water runs clearer.
2. Cover with water and boil for about 10 minutes, then drain and rinse. This parboil step reduces the strong aroma if you prefer it milder.
3. Return to the pot with about 2 cups of fresh water for every cup of rice and a pinch of salt.
4. Cook on low heat for 20 to 25 minutes, until tender and the water is absorbed. Add a splash of water if needed.
